Organic Gluten-Free Corn Bread Muffins

Ingredients
3 Tbsp melted butter
1/3 cup unsweetened applesauce
1/4 cup honey
1/4 cup coconut sugar
1 large organic pasture-raised egg
1 cup almond milk
1 lemon juice
1 cup cornmeal
1 cup gluten-free flour
1/2 tsp salt
1/2 tsp baking soda
Instructions:
Preheat oven to 350, and line a muffin tin with paper liners. Pour melted butter in a large mixing bowl with applesauce, honey, coconut sugar, and egg. Mix all ingredients and pour in salt and baking soda then add almond milk. Last, add cornmeal and gluten free flour and stir until combined.
Pour evenly into muffin tins. Bake for 18 minutes for soft and moist or up to 25 for a dryer crispy shell.
