Organic Vegan Pesto

2 cups fresh organic basil
1/3 cup organic pine nuts
1/2 cup organic extra virgin olive oil
4 large organic garlic cloves
1/4 teaspoon himalayan salt
1/4 teaspoon ground black pepper
2 tablespoons organic gluten-free nutritional yeast
1 ripe organic avocado
Prep basil by rinsing and thoroughly drying.
To make the pesto, add all ingredients to a food processor and mix until combined, leaving a little texture. Taste and adjust seasonings as needed. Add a teaspoon of lemon juice if you’re planning on storing the pesto. Store covered in the fridge for up to a couple weeks, though best when fresh. Freeze for longer-term storage.
