Organic Spicy Masoor Dal

1 ½ cup organic orange or red lentils
½ tsp organic ground turmeric (or 1/4 tsp fresh grated)
1 ½ teaspoon himilayan salt
3 tablespoons organic coconut oil
½ teaspoon organic ground asafetida
1 teaspoon organic cumin seeds
4 dried hot organic red chiles
2 cloves organic garlic
5 cups of filtered water
Rinse lentils several times until the water runs clear. Place lentils in a heavy saucepan with water, salt and turmeric. Bring the lentils to a simmer and then reduce heat and let simmer on low for 25 minutes. Check and stir lentils at this point and then cook until lentils are tender. Leave covered, on very low heat, as you do the next step.
Chop garlic and place in the lentil mixture.
Place coconut oil, asafetida, red chiles, and cumin seeds in a separate pan on medium heat. As soon as the chiles turn dark red, pour this mixture into the lentils. Cover the lentils and let them cook until tender.
