Organic Avocado Watercress Salad

Serving: 2 appetizer salads

 

Ingredients:

1 firm ripe organic avocado

6 cups organic watercress leaves (2 large bunches without stems)

¼ cup organic rice vinegar

1 tablespoon organic grated sweet onion (I like Walla Walla or Vidalia onions)

¼ cup grated organic apple

4 teaspoons organic bragg sauce or organic tamari

1 teaspoon of coconut sugar or a tablespoon of maple syrup

3 tablespoons olive oil

Salt and pepper to taste

Instructions:

Stir together vinegar, onion, apple, tamari or bragg liquid aminos, syrup, oil and salt and pepper. Just before serving toss watercress and coat with dressing. Add Avocado and a touch of dressing on top to make sure Avocado doesn’t get mushy but has dressing.
